| Molasses Bars |

| Ingredients |
| 1/2 cup butter |
| 1/2 cup sugar |
| 1 egg, slightly beaten |
| 1/4 cup molasses |
| 1/4 teaspoon salt |
| 1/2 teaspoon cinnamon |
| 1/4 teaspoon ginger |
| 1/4 teaspoon cloves |
| 1/2 cup hot coffee |
| 1 1/4 cups all-purpose flour |
| 1/2 teaspoon baking soda |
| Directions |
Cream together the butter and sugar; add egg, beating well. Add molasses, salt, cinnamon, ginger, and cloves; stir to blend thoroughly. Add part of the coffee; stir. Combine flour and baking soda; stir half into the creamed mixture, blending well.
Add the remaining coffee, followed by remaining flour, stirring after each addition. Spread batter into a greased and floured 9-inch square baking pan. Bake at 350° for about 25 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
Icing
1 1/2 cups confectioners' sugar
3 tablespoons butter, soft
5 teaspoons orange juice
Mix icing ingredients all together in a small bowl, adding a little more juice if needed. Spread over cooled molasses bars.
Makes about 36 molasses bars. |
